Cotopaxi national park in the Ecuadorian highlands has some of the world’s most spectacular landscapes. Think crystal clear lakes mirroring snow-capped peaks and volcanic craters, with wild horses and llamas roaming nearby. Wow. And don’t worry, the volcano’s no longer active.
