Call it whatever you want, barbie, barbeque or BBQ, the act of cooking on a red hot grill in the bright sunny outdoors is the essential part of New Zealand culture and culinary experience.
The great Kiwi barbie most often takes part in the backyard of any New Zealander’s home, but keeping the heat out of the kitchen appeals so much in the gorgeous summer days that even student flats, chic city apartments and public parks are equipped with all the vital accessories for an outdoor barbeque.
The art of cooking outside is not a modern phenomenon in New Zealand. In fact, the Maoris have long been cooking outside in what is known as a Hangi. These are essentially earth ovens where stones are heated up to sizzling temperatures and food in parcels are placed on top and buried with sand until cooked.
So what can you expect to be served up at a Kiwi Barbie? Traditionally they’re centred around the good ol’ bangers and burgers, served up with Kiwi favourite Watties tomato sauce and bread. But whilst this is still a staple favourite, barbeque cuisine is becoming more sophisticated from gourmet sausages to freshly caught crayfish and oysters. And for Christmas? Forget dry oven-roasted turkey. Out here, you’ll be kicking back in your shorts waiting for your juicy barbequed leg of lamb with an ice cold beer in hand.
